Garlic Butter Tuscan Salmon
Restaurant-quality pan seared salmon in a delicious creamy garlic, spinach and sun-dried tomato sauce.

Ingredients
- 2 (6 oz each) Salmon fillets
- 1 tbsp Olive oil
- 2 tbsp Butter
- 3 Garlic cloves, minced
- 1/3 cup Sun-dried tomatoes, drained and chopped
- 2 cups Baby spinach
- 1/2 cup Heavy cream
- 1/4 cup Parmesan cheese, grated
Instructions
- Season salmon with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear salmon skin-side down for 4-5 minutes, then flip and cook 2-3 minutes more until cooked through. Remove and set aside.
- In the same skillet, melt butter. Add garlic and cook for 1 minute.
- Add sun-dried tomatoes and spinach, cook until spinach wilts.
- Stir in heavy cream and parmesan cheese. Bring to a gentle simmer.
- Return salmon to the skillet. Spoon sauce over the salmon and serve warm.
