Lemon Blueberry Bars

  1. Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
  2. For the crust: Use a food processor or pastry blender to cut the cold butter into 1 cup of flour and the powdered sugar until it resembles coarse crumbs.
  3. Press the crust mixture firmly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden. Remove from the oven.
  4. While the crust bakes, whisk together the granulated sugar, remaining 1/2 cup flour, eggs, lemon juice, and lemon zest until smooth.
  5. Scatter the fresh blueberries evenly over the warm, baked crust.
  6. Pour the lemon filling over the blueberries in the pan.
  7. Return the pan to the oven and bake for another 20-25 minutes until the filling is set and no longer jiggles.
  8. Let the bars cool completely to room temperature before slicing and dusting with extra powdered sugar.
