Lemon Blueberry Bars
A buttery shortbread crust topped with a tangy, vibrant lemon filling and bursting with fresh, juicy blueberries.

Ingredients
- 1.5 cups All-purpose flour
- 1/2 cup Powdered sugar
- 3/4 cup (1.5 sticks) Unsalted butter, cold and cubed
- 1 cup Granulated sugar
- 3 Large eggs
- 1/2 cup Fresh lemon juice
- 1 tbsp Lemon zest
- 1.5 cups Fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- For the crust: Use a food processor or pastry blender to cut the cold butter into 1 cup of flour and the powdered sugar until it resembles coarse crumbs.
- Press the crust mixture firmly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden. Remove from the oven.
- While the crust bakes, whisk together the granulated sugar, remaining 1/2 cup flour, eggs, lemon juice, and lemon zest until smooth.
- Scatter the fresh blueberries evenly over the warm, baked crust.
- Pour the lemon filling over the blueberries in the pan.
- Return the pan to the oven and bake for another 20-25 minutes until the filling is set and no longer jiggles.
- Let the bars cool completely to room temperature before slicing and dusting with extra powdered sugar.
