Vanilla Protein Pancakes
Thick, fluffy, and incredibly filling pancakes powered by vanilla protein powder. A macro-friendly breakfast that tastes like a treat.

Ingredients
- 1 scoop (approx 30g) Vanilla protein powder
- 1/2 cup Rolled oats
- 1 tsp Baking powder
- 1/2 tsp Cinnamon
- 2 Large eggs
- 1/4 cup Almond milk (or preferred milk)
- 1/2 tsp Vanilla extract
- for pan Cooking spray or coconut oil
Instructions
- Place the rolled oats into a blender and pulse until they turn into a fine oat flour.
- Add the protein powder, baking powder, and cinnamon to the blender and pulse once to combine the dry ingredients.
- Add the eggs, almond milk, and vanilla extract into the blender with the dry ingredients.
- Blend on medium speed until a smooth batter forms. If the batter is exceedingly thick, add a splash more milk.
- Heat a non-stick skillet or griddle over medium-low heat. Lightly coat with cooking spray or coconut oil.
- Pour about 1/4 cup of batter per pancake onto the warm skillet.
- Cook for about 2-3 minutes, until small bubbles form on the surface and the edges look set.
- Flip carefully with a spatula and cook for another 1-2 minutes on the other side until golden brown.
- Serve warm with a drizzle of maple syrup, Greek yogurt, or fresh berries.
